Rinse the rice under cold water until the water runs clear.
In a large pot or saucepan, heat vegetable oil over medium heat. Add chopped onions and minced garlic. Sauté until the onions are translucent. Add the frozen mixed vegetables to the pot and cook for about 5 minutes, stirring occasionally.
Add the rinsed rice to the pot. Stir well to combine with the vegetables.
Sprinkle cumin powder, paprika, salt, and pepper over the rice and vegetable mixture. Stir to evenly distribute the spices.
Pour in the vegetable broth or water. Bring the mixture to a boil.
Reduce the heat to low, cover the pot, and simmer for approximately 15-20 minutes or until the rice is cooked and the liquid is absorbed. Make sure to check the rice package for specific cooking instructions.
Once the rice is cooked, fluff it with a fork. Serve hot.
