Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle the salmon with olive oil and sprinkle minced garlic, dried thyme, dried rosemary, salt, and pepper evenly over the fillets. Add the lemon slices on top of the salmon.
Arrange the frozen California mix vegetables around the salmon on the baking sheet. Drizzle with a bit of olive oil and season with salt and pepper.
Bake in the preheated oven for about 20-25 minutes or until the salmon is cooked through and flakes easily with a fork. Serve hot.
