  • 4 cups Below Zero California mix
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Preparation

  1. In a large pot, heat olive oil over medium heat. Add chopped onions and minced garlic. Sauté until the onions are softened.
  2. Add the California mix vegetables to the pot. Stir and cook for a few minutes until they start to thaw.
  3. Pour in the vegetable broth. Bring the mixture to a boil.
  4. Season the soup with dried thyme, dried oregano, salt, and pepper.
  5. Reduce the heat to low and let the soup simmer for about 15-20 minutes, allowing the flavors to meld and the vegetables to become tender.
  6. Serve hot.
