  • 2 cups Below Zero pineapple chunks
  • 1 cup pineapple juice
  • 1/2 cup white rum
  • 2 tablespoons fresh lime juice
  • 1-2 tablespoons simple syrup (adjust to taste)
  • Ice cubes

Preparation

  1. Prepare Simple Syrup: In a small saucepan, combine equal parts water and sugar. Heat over medium heat, stirring until the sugar dissolves. Remove from heat and let it cool. 
  2. In a blender, combine the frozen pineapple chunks, pineapple juice, white rum, fresh lime juice, and simple syrup. Blend until smooth and creamy.
  3. Fill glasses with ice cubes and pour the pineapple cocktail over the ice.

 

You can remove the alcohol to make it a mocktail!
