Preparation
Preheat your oven to 350°F (175°C).
In a large bowl, combine the sliced peaches, granulated sugar, flour, vanilla extract, ground cinnamon, nutmeg (if using), and a pinch of salt. Toss until the peaches are well coated. Allow the mixture to sit for a few minutes to let the flavors meld.
Transfer the peach mixture into a baking dish (8×8 inches or a similar size).
In a separate bowl, prepare the crumble topping. Combine the rolled oats, flour, brown sugar, cold butter pieces, ground cinnamon, and a pinch of salt. Use your fingers or a pastry cutter to mix the ingredients until it resembles coarse crumbs.
Sprinkle the crumble topping evenly over the peach mixture in the baking dish.
Place the baking dish in the preheated oven and bake for 40-45 minutes or until the crumble topping is golden brown, and the peach filling is bubbling.
Remove the peach crumble from the oven and let it cool for a few minutes before serving.
Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream if desired.
