  • 2 cups Below Zero mango chunks, thawed and diced
  • 1/2 cup red bell pepper, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeds removed and finely chopped
  • 1-2 cloves garlic, minced
  • Juice of 1 lime
  • Salt and pepper to taste

Preparation

  1. In a large bowl, combine the diced mango, chopped red bell pepper, red onion, jalapeño, cilantro, and minced garlic. Squeeze the juice of one lime over the mixture. Season the salsa with salt and pepper to taste. Stir well to combine all the ingredients.
  2. For enhanced flavors, refrigerate the mango salsa for at least 30 minutes before serving. Serve the mango salsa with tortilla chips, grilled chicken, fish, tacos, or as a refreshing side dish.
