1 teaspoon dried Italian herbs (oregano, basil, thyme)
Salt and pepper to taste
Preparation
In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic. Sauté until the onion is translucent.
Add the Italian Mix vegetables and cook for about 5 minutes, or until the vegetables are slightly softened.
Pour in the diced tomatoes (with their juice), the tomato soup and vegetable broth. Stir in dried Italian herbs, salt, and pepper. Bring the soup to a simmer and let it cook for 10 minutes.
Transfer portions of the soup to a blender in batches and blend until smooth.
