  • 750 g Below Zero Italian Mixed Vegetables
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 2 can (284 ml) tomato soup
  • 4 cups vegetable broth
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste

Preparation

  1. In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic. Sauté until the onion is translucent.
  2. Add the Italian Mix vegetables and cook for about 5 minutes, or until the vegetables are slightly softened.
  3. Pour in the diced tomatoes (with their juice), the tomato soup and vegetable broth. Stir in dried Italian herbs, salt, and pepper. Bring the soup to a simmer and let it cook for 10 minutes.
  4. Transfer portions of the soup to a blender in batches and blend until smooth.
  5. Serve the soup.
