Ingredients

  • 4 cups Below Zero corn
  • 6 slices bacon, cooked and crumbled
  • 1 red bell pepper, diced
  • 1 onion, finely chopped
  • 1 cup mayonnaise 
  • 1 cup shredded cheddar cheese 
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Chopped green onions for garnish (optional)

Preparation

  1. Preheat your oven to 350°F (175°C). Grease a casserole dish with cooking spray.
  2. Cook the bacon until crispy. Crumble the bacon into small pieces and set aside.
  3. In a skillet, sauté the chopped onion and diced red bell pepper until they are softened. Set aside.
  4. In a large mixing bowl, whisk together the flour, cornmeal, sugar, baking powder, salt, and black pepper.
  5. Add the frozen corn, crumbled bacon, sautéed onion, and red bell pepper to the dry ingredients. Mix well to combine.
  6. Stir in the vegan mayonnaise and shredded cheddar cheese until all ingredients are evenly coated.
  7. Transfer the mixture to the prepared casserole dish, spreading it out evenly.
  8. Bake in the preheated oven for 45-50 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let it cool slightly. Garnish with chopped green onions if desired. Serve warm.
