  • 2 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup unsalted butter, melted
  • 2 cups shredded cheddar cheese
  • 1 cup frozen Below Zero chopped spinach, thawed and excess water squeezed
  • 1 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for greasing the skillet

Preparation

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt. Add buttermilk and melted butter to the dry ingredients. Stir until just combined. Fold in shredded cheddar cheese.
  3. Turn the dough out onto a floured surface and knead it gently a few times. Shape it into 15 little ball and dispose them in round on the bottom of your greased skillet. 
  4. In a mixing bowl, combine thawed chopped spinach, cream cheese, sour cream, mayonnaise, shredded mozzarella cheese, grated Parmesan cheese, minced garlic, salt, and pepper. Mix until well combined. Spoon the spinach dip center of your dough balls.
  5. Bake in the preheated oven for approximately 25-30 minutes or until the bread is golden brown and the dip is hot and bubbly.
  6. Remove from the oven, and let it cool slightly before serving.
