In a bowl, combine the brunoise fruits mix, chopped jalapeño, chopped red onion, chopped cilantro, lime juice, and honey or maple syrup. Season the salsa with salt to taste. Stir well to combine all the ingredients.
For enhanced flavors, refrigerate the salsa for at least 30 minutes before serving.
Serve the Brunoise salsa with tortilla chips, grilled chicken or fish, or as a topping for tacos.
