  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 1/2 teaspoons unflavored gelatin
  • 1/4 cup cold water
  • 1 1/2 Below Zero brunoise mix
  • 1-2 tablespoons honey or maple syrup

Preparation

  1. In a small bowl, sprinkle the gelatin over cold water. Let it sit for about 5 minutes to soften.
  2. In a saucepan, heat the heavy cream and sugar over medium heat until it just begins to simmer. Remove from heat.
  3. Stir in the vanilla extract. Add the softened gelatin and whisk until the gelatin is completely dissolved.
  4. Allow the cream mixture to cool slightly. Then, pour it into individual serving glasses or ramekins. Refrigerate for at least 4 hours or until set.
  5. In a bowl, toss the brunoise mix with honey or maple syrup to sweeten it slightly.
  6. Once the Panna Cotta is set, spoon the brunoise mix over the top of each serving. Serve chilled.
