1 pound Below Zero asparagus spears, thawed and chopped into bite-sized pieces
4 slices of bacon
1 tablespoon olive oil
1 small onion, finely chopped
1 clove garlic, minced
1 cup shredded Gruyere or Swiss cheese
4 large eggs
1 cup milk
Salt and pepper to taste
Preparation
Preheat your oven to 375°F (190°C).
Cook the bacon slices until crispy, then crumble them into small pieces.
In a skillet, heat olive oil over medium heat. Add chopped asparagus, onions, and garlic. Sauté until the vegetables are tender, about 5-7 minutes. Set aside to cool slightly.
In a bowl, whisk together eggs, milk, salt, pepper, and nutmeg (if using). Stir in the shredded cheese, crumbled bacon, and sautéed asparagus mixture.
Pour the quiche filling into the pre-baked pie crust. Spread the ingredients.
Place the quiche in the preheated oven and bake for 30-35 minutes, or until the center is set and the top is golden brown.
Allow the quiche to cool for a few minutes before slicing.
